Gli agnolotti sono un tipo di pasta fresca ripiena di carne, originari del Piemonte e diffusi soprattutto in questa regione fino alla Liguria, all'Emilia e all'Oltrepò Pavese. Gli agnolotti rappresentano il piatto principe della cucina piemontese e possono essere serviti in svariate maniere, in brodo come i tortellini, con il ragù, con il sugo dello stufato o del brasato di cui vengono riempiti, oppure più semplicemente con burro e salvia o con una passata di pomodoro.
